Selected from across Ecuador, these organic cacao beans were expertly fermented near Guayaquil by Vicente Norero of Camino Verde.
From 2008 to 2016 Vicente operated a 381-hectare cocoa estate, which he rehabilitated after years of disrepair. He called his operation and labor of love Camino Verde, and over the eight years he was in charge, the farm became a model cacao plantation in Ecuador. Vicente used his background in microbiology to develop a multitude of inoculated ferments, highlighting the role of fermentation for chocolate makers and consumers alike.
In 2017 Vicente moved operations north to Guayaquil, and he now buys freshly harvested, unfermented beans from over 3500 farmers around Ecuador. Many of those farmers are members of associations and cooperatives that aggregate the beans and sell them to Camino Verde, where Vicente ferments the beans in his centralised facility. With a larger fermentary and the ability to experiment with a selection of cacao from across Ecuador, Vicente can now expand the work he had been doing allowing him to build new and interesting flavour profiles which he could never have done using only cacao from a single farm.
Says Vicente, “Anyone can source cacao. Our knowledge of farming and managing a plantation allows us to help the farmer in ways that other buyers do not. This support and respect that we share with the farmer creates a trust and loyalty relation that is reﬂected in the product the farmer delivers to us.
