Packaging Note: Our Ucayali River packaging is presently out of stock, (paper delays). All single order Ucayali bars will be sent in plain Foundry wrappers without the illustration on them. "Ucayali River, Peru 70%" will be handwritten on the front and each bar will still be individually numbered with its batch code sticker.

If you are wishing to gift a bar of Ucayali (or the packaging is very important to you) please send us a note (or email) with your order and we will do our best to include a bar in one of the final remaining original illustrated wrappers. We hope to have the paper available again by the end of March, but it's really out of our control, and there's no point in 'sweating the small stuff.

Dotted along the banks of Peru’s Ucayali River, you’ll find family-owned farms growing some of the world’s best cacao. From this simple ingredient we create an astonishingly light and sprightly chocolate alive with complex bouquets of spring blossoms.

While Ucayali River, Peru evokes flavours of rich tropical fruits, floral bouquets and a delicate finish it’s simply the cacao’s origin talking – plus organic cane sugar and our obsession for preserving the flavours of provenance. And because your senses are unique, you may discover characters and aromas others may not – that’s the magic of Foundry Chocolate.

From the 2018 vintage. Please note the batch number you receive will differ from the one pictured.

70g

Ingredients: Cacao Beans & Organic Cane Sugar. The Cacao Beans are Uncertified Organic. No added cacao butter, lecithin or vanilla.

Dairy Free, Gluten Free, Soy Free and 100% Plant Based.

Origin Information:
Ucayali River Cacao is a central fermentary that works with cacao farmers along the Ucayali River – one of the headwaters of the Amazon River - outside of the Peruvian city of Pucallpa.

The region has historically been afflicted with unrest from narco-trafficking and the presence of the Shining Path militant group.

Ucayali River Cacao has partnered with USAID and Alianza Peru to give local farmers access to an alternate market to cocaine.

Working with around 400 smallholder farmers with one to three hectares of land each, Ucayali River Cacao buys wet cacao at a premium price, then centrally ferments and dries it.
